Ingredients

  • 250 g fine bulgur
  • 1 kg vine tomatoes (5 vine tomatoes)
  • 3 light green Turkish bell peppers
  • 1 untreated lemon
  • Salt
  • Pepper
  • 1 tsp chili flakes
  • 6 tbsp Olive oil
  • parsley (and mint)

Instructions

    Place the bulgur in a bowl. Gradually add 350 ml lukewarm water and knead with your hands. Cover and let it soak for 20 minutes.

    Meanwhile, blanch the tomatoes in boiling water, then shock them in cold water to cool and peel. Cut the tomatoes crosswise into halves, remove seeds and stems, and dice half of them. Slice the bell peppers lengthwise, removing stems, seeds, and membranes; wash the flesh and cut into small pieces.

    Wash the lemon hot, dry it, grate its zest finely, then squeeze out the juice. Mix both with ½ tsp salt, plenty freshly ground pepper, and chili flakes. Finally fold in the olive oil. Wash and shake parsley and mint dry, finely chop the leaves, and stir them in.

    Combine the tomato cubes and bell pepper pieces with the dressing. Rub the bulgur into the mixture by hand until small clumps dissolve. Mix everything well and let it rest for at least 30 minutes. Before serving season the salad again with salt and pepper.
