Meatballs with Paprika Rice

Ingredients
- 150 g Basmati rice
- Salt
- 3 paprika peppers (red, green, yellow)
- 1 onion
- 4 tbsp olive oil
- 250 g passata tomatoes
- 1 stale roll
- 1 egg
- 0.5 tsp dried thyme
- 400 g mixed ground meat
- pepper from the mill
- 1 tbsp freshly chopped parsley
Instructions

Rinse the rice in a sieve and bring to a boil covered with about 300 ml salted water. Simmer gently for about 20 minutes.

Wash, halve, de-stem and chop the paprika peppers. Peel and finely dice the onion. Sauté with the paprika in 2 tbsp hot oil for 2-3 minutes. Add the tomatoes and simmer quietly for about 10 minutes.

Soak the roll in lukewarm water, then squeeze out excess liquid, crumble it, and mix into the ground meat along with the egg and thyme. Season with salt and pepper and form small balls. Fry in the remaining hot oil in a non-stick pan until browned all around, about 6 minutes.

Stir the rice into the sauce and season with salt and pepper to taste. Plate the rice, top with the meatballs, and sprinkle with parsley before serving.
