Ingredients

  • 4 chicken breast fillets (≈120 g each)
  • 1 untreated lemon
  • 350 g green beans
  • Salt
  • 300 g rice noodles
  • 20 g butter
  • 2 tbsp olive oil
  • pepper (ground fresh)
  • 4 tbsp capers
  • chopped flat parsley for garnish

Instructions

    Wash the chicken breast fillets and pat them dry with paper towels. Wash the lemon and slice it into rounds. Trim, wash, and cook the green beans in boiling salted water for 8–10 minutes. Meanwhile, cook the rice noodles according to package instructions in boiling water; drain and set aside.

    At the same time, heat butter and olive oil in a skillet. Brown the chicken breast fillets on all sides for a total of 10–12 minutes. Season with salt and pepper. Add the capers and lemon slices, cooking for 1–2 more minutes while stirring occasionally.

    Arrange the noodles in deep bowls, top with the green beans and sliced chicken breast. Distribute lemon slices and capers over the dish and sprinkle chopped parsley on top.
