Meatballs in Tomato Garlic Sauce on Beans
The meatballs in tomato garlic sauce on beans from Spoonsparrow are well received by the whole family.
Ingredients
- 4 Stalks Parsley
- 2 Stalks Mint
- 500 g ground beef
- 3 tbsp whole grain breadcrumbs (10 g each)
- 1 egg
- Salt
- Pepper
- 1 tsp Sweet paprika powder
- 1 onion
- 4 cloves garlic
- 2 tbsp olive oil
- 2 tbsp tomato paste (15 g each)
- 3 sprigs thyme
- 300 ml Vegetable broth
- 600 g canned diced tomatoes
- 200 g white beans (canned; drained weight)
- 1 bay leaf

Wash parsley and mint, dry and finely chop leaves. Mix with ground beef, breadcrumbs, egg, salt, pepper, and paprika; form 12 meatballs.

Peel onion and garlic, finely dice. Heat oil in a pan. Sauté onion and garlic over medium heat until translucent. Add tomato paste and cook for 2 minutes. Meanwhile wash thyme, dry, strip leaves, set half aside.

Add 150 ml broth to the pan, stir in tomatoes, remaining thyme, salt, and pepper; simmer gently for about 10 minutes.

Place meatballs into sauce, cover partially, and cook over low heat for 30 minutes, stirring occasionally and adding water if needed.

Meanwhile drain beans, rinse, combine with remaining broth and bay leaf in a pot, bring to boil, then reduce to gentle simmer for 10 minutes. Remove bay leaf, add remaining thyme, season with salt and pepper.

Serve meatballs with sauce over the beans.
