Ground Meatballs on Skewers

Ingredients
- 500 g mixed ground meat
- 1 onion
- 1 Garlic clove
- 3 parsley sprigs
- 1 loaf of bread (day-old)
- 2 Eggs
- 20 g butter
- 1 tbsp plant oil
- salt (pepper)
- 4 plant oils
- salt (pepper)
- 1 long eggplant
- 6 tbsp Olive oil
- 150 g firm sheep cheese
- 10 black olives
- 0.5 head lettuce
Instructions

Soak the bread in lukewarm water. Peel and finely chop onion and garlic. Mix with meat, eggs, parsley, squeezed bread, salt, and pepper. Shape into patties and fry in hot butter with oil on all sides until crisp.

Wash the eggplant, trim ends, slice lengthwise into thin rounds. Salt the slices, let sit for 10 minutes to draw out water, rinse cold, pat dry, and fry portions in hot oil.

Cube the cheese, tear lettuce into bite‑sized pieces, and lay a plate with it. Wrap an eggplant slice around each meatball, place a piece of cheese with a black olive in the center, secure with wooden skewers, and arrange on the lettuce.
