Ingredients
- 500 g mixed ground meat
- 1 shallot (finely chopped)
- 1 stale roll
- milk (for soaking)
- 1 egg
- 2 tbsp chopped parsley
- 0.5 tsp Salt
- Pepper (freshly ground)
- butter clarified butter
- 100 g whipping cream
- fix sauce binder
- 3 tsp horseradish (jarred)
- Salt
- white pepper

Sauté the shallot in hot clarified butter until translucent. Soak the roll in milk, squeeze out excess liquid and combine with the shallots and egg, then add to the ground meat. Mix well with parsley, salt, and pepper. Shape small balls with damp hands and fry them in hot butter until golden brown all around.

For the sauce bring the cream to a boil, thicken with the sauce binder to desired consistency, stir in horseradish, and season with salt and white pepper.
