Chicken Breast with Apricot Filling

Ingredients
- 4 chicken breast fillets (125 g)
- salt, freshly ground pepper
- 8 tsp apricot jam
- a pinch of cinnamon, clove powder and curry
- 8 canned apricot halves
- 2 slices raclette cheese (40 g)
- 12 large basil leaves
- 2 tbsp oil
- 200 ml clear chicken broth
- 160 g basmati rice
- 1 tbsp butter
- 1 tbsp almond slivers
- a splash of lemon juice

Slice a pocket into the chicken breast fillets lengthwise. Season the meat with salt and pepper. Mix 4 tsp jam with the spices and spread inside the fillets. Halve the apricots. Cut two apricots into strips, slice the raclette cheese into strips as well. Fill the fillets with apricot strips, cheese and basil. Secure with wooden skewers.

Heat oil in a pan. Brown the chicken fillets. Add broth and simmer for 12-15 minutes.

Cook rice in salted water according to instructions. Melt butter and toast almonds in it. Mix almonds into the cooked rice.

Chop remaining apricots finely. Remove meat from the pan. Add chopped apricots and remaining fruit spread to the cooking liquid, bring to a boil and season with lemon juice, salt and pepper. Slice chicken breast and serve with sauce and rice.
