Matjes with Mustard Cucumbers and Green Bean Salad

Ingredients
- 4 matjes fillets
- 150 g mustard cucumber
- 1 tbsp mayonnaise
- 2 tbsp Sour cream
- 0.5 bunch dill
- Salt
- Pepper (freshly ground)
- 1 Red Onion
- 2 large radishes
- 200 g Green beans
- 2 tbsp butter
- 1 chopped chili pepper
- 4 slices baguette
Instructions

Coarsely dice the mustard cucumbers and mix with mayonnaise and sour cream. Rinse the dill, shake dry, chop half and add; season with salt and pepper.

Peel the onion and slice into thin rings. Wash, trim, and slice radishes thinly. Wash, trim green beans and blanch in boiling salted water for 6–8 minutes. Shock in cold water, then sauté in hot butter with chopped chili pepper. Season with salt and pepper.

Place a Matjes fillet on each baguette slice. Arrange onion rings, green beans, and radish slices atop. Add mustard cucumber mixture and garnish with remaining dill sprigs. Serve immediately.
