- 4 shallots
- 4 pickled cucumbers
- 4 double matjes fillets
- 2 tbsp capers
- 1 tsp medium-hot mustard
- 2 tbsp lemon juice
- freshly ground pepper
- smooth parsley
- 4 potato pancakes (frozen)

Peel and finely chop the shallots. Dice the cucumbers into very small cubes. If any bones remain in the matjes fillets, remove them. Finely mince the fillets with a large sharp knife. Also finely chop the capers.

Mix the mustard, lemon juice, and prepared ingredients thoroughly. Season with pepper. Tear parsley leaves from the stems and finely chop, then fold into the mixture. Cover the tartare and let it rest for about 30 minutes.

Bake the potato pancakes according to package instructions until crisp in the oven. Re-season the tartare with pepper and serve atop the pancakes.
