- 40 g starch (or rice flour)
- 0.5 tsp Baking powder
- 1 Egg white
- oil for frying
- 8 stalks chives
- 8 edible flowers
- 200 g beef fillet (cut into 4 pieces)
- 3 tbsp teriyaki sauce
- 2 tbsp honey
- 2 tbsp sesame seeds
- 4 tbsp wasabi oil

Wash and dry the chives and flowers. Whisk starch or rice flour with baking powder and 40 ml cold water until smooth. Lightly beat the egg white and fold into the mixture.

Heat oil to 180 °C (so bubbles form around a submerged wooden stick). Mix teriyaki sauce, honey, and sesame seeds; gently warm over low heat. Marinate the fillet pieces in this mixture for 10 minutes at that temperature, then plate them. Thread chive stalks and flowers through the batter and fry portions until crisp. Remove and drain on paper towels. For serving, arrange the chive tempura with flowers atop the fillet, garnish the plate with a drizzle of wasabi oil, and serve as an appetizer.
