Ingredients

  • 2 onions
  • 350 g potatoes
  • 3 sour apples (e.g., Boskop)
  • 7 slices breakfast bacon
  • 2 tsp oil
  • 150 ml apple juice
  • 750 ml vegetable broth
  • 5 stems marjoram
  • Salt
  • Pepper

    Peel and dice onions, potatoes, and 2 apples. Dice 3 slices of bacon and fry in hot oil. Add onions, apples, and potatoes; sauté briefly and deglaze with apple juice and broth. Simmer on medium heat for about 15-20 minutes.

    Core one apple with an apple corer and slice into rings. Fry remaining bacon in a pan without added fat until crisp, drain on paper towels, then fry the apple rings in the bacon fat for 2 minutes per side.

    Tear marjoram leaves from stems. Puree the soup finely and season with salt, pepper, and marjoram. Serve with apple rings and bacon strips.
