Ingredients

  • 8 matjes fillets
  • 4 pickled cucumbers
  • 200 g chanterelle mushrooms
  • 1 Red Onion
  • 2 tbsp Rapeseed oil
  • 75 ml orange juice
  • 1 tbsp wine vinegar
  • a pinch of sugar
  • Salt
  • pepper (ground)
  • fresh chopped dill
  • crackers

Instructions

    Pat the matjes dry and dice into small cubes. Cut the pickled cucumbers into small pieces as well. Clean the chanterelle mushrooms and cut them into bite‑sized chunks. Peel and finely chop the onion. Sauté the onions and mushrooms in hot oil for 1–2 minutes.

    Remove from heat, deglaze with orange juice and vinegar, then season with sugar, salt, and pepper. Mix in the remaining salad ingredients and let rest for about 10 minutes. Taste and adjust seasoning before filling glasses. Sprinkle dill on top and serve with crackers.
