Ingredients

  • 300 g Puy lentils
  • 600 ml Vegetable Broth
  • 2 tbsp balsamic vinegar
  • 4 tbsp olive oil
  • Lemon juice
  • Salt
  • Pepper
  • 250 g Cherry Tomatoes
  • 250 g feta cheese
  • 1 Red Onion
  • 2 tbsp freshly chopped coriander leaves

Instructions

    Wash and drain the lentils. Bring the broth to a boil and simmer the lentils gently for about 20 minutes. If necessary, drain, mix with balsamic vinegar and olive oil, then season with lemon juice, salt, and pepper. Let cool slightly.

    While the lentils cook, wash and halve the tomatoes. Cube the feta cheese. Peel, halve, and slice the onion into strips. Gently fold all ingredients together, taste, and arrange on plates. Garnish with coriander leaves before serving.
