Vanilla Ice Cream with Berry Sauce

Ingredients
- 500 ml milk (3.5 % fat)
- 200 ml whipping cream
- 1 vanilla pod
- 7 egg yolks
- 150 g whole cane sugar
- 200 g strawberries
- 100 g mixed berries
- 4 stalks lemon balm

Pour milk and cream into a pot and bring to a boil. Split the vanilla pod lengthwise, scrape out the seeds and stir both the seeds and pod into the milk-cream mixture. Simmer over low heat for about 5 minutes.

Meanwhile beat the egg yolks with sugar in a bowl until creamy.

Stir the boiling milk into the egg yolk mixture, pour everything back into the pot, remove the vanilla pod. Stir over low heat until the custard thickens but never let it boil.

Sift the vanilla custard through a sieve into a bowl, cool on ice water while stirring occasionally.

Transfer the chilled custard to an ice cream maker and churn. (If no machine, pour into a shallow metal dish and freeze in a deep freezer, stirring frequently during the first hour).

Wash strawberries, cut stems off, add with 3–4 tbsp water to a pot. Bring to a boil and simmer over medium heat for about 5 minutes until berries soften and start breaking down. Puree, strain through a fine sieve, and cool.

Wash remaining berries, pat dry. Wash lemon balm, shake dry, and finely chop.

Serve by scooping ice cream onto dessert plates with the berry puree, garnish with berries and lemon balm.
