- 100 g marzipan base
- 50 g lemon zest
- 1 Egg white
- 100 g shredded coconut
- 50 g sugar
- 1 pinch salt
- 2 tbsp lemon juice
- 2 tsp grated lemon peel

Instructions

Preheat the oven to 140°C fan and line a baking tray with parchment paper.

Whisk the egg white until stiff. Gradually add salt, sugar, lemon juice and zest, whisking until very firm. Finely chop the marzipan, mix with coconut flakes and lemon zest, then fold into the meringue gently. Spread about 2 cm thick on the parchment using a damp palette or dough scraper.

Whisk the egg white with sugar until very stiff and spread over the dough. Sprinkle with shredded coconut and bake at medium height for about 25 minutes (do not brown). Remove immediately and cut into small cubes.
