Butter Cookies

Ingredients
- 250 g spelt flour Type 1050
- 75 g powdered sugar (from raw cane sugar)
- 1 pinch salt
- 0.5 Organic lemon
- 0.5 Vanilla pod
- 150 g cold butter
- 1 egg yolk
- 2 tbsp milk (3.5% fat)

For the dough, mix flour with powdered sugar and salt. Rinse the lemon hot, dry rub it and grate the zest. Split the vanilla pod lengthwise and scrape out the seeds. Add both to the mixture. Add butter in small flakes and quickly work everything into a smooth dough. Cover the dough and place it in the refrigerator for about 30 minutes.

Roll the dough to a thickness of 0.5 cm on a floured surface, cut out Christmas motifs with cookie cutters, and place them on a baking sheet. Whisk egg yolk with milk and brush the cookies with this mixture. Bake in a preheated oven at 200 °C (180 °C fan; gas: level 3) for 8–12 minutes until golden brown.

Immediately transfer the butter cookies to a cooling rack and let them cool.
