Ingredients

  • 1 kg chestnuts
  • 250 g sweet and sour apples
  • 2 onions
  • Salt
  • ground pepper
  • 1 tbsp chopped thyme

Instructions

    Preheat the oven to 225 °C (convection). Score the chestnuts crosswise with a small sharp knife and roast in the preheated oven for about 40 minutes, turning occasionally. Remove and peel the shells while still hot.

    Peel the onions and apples. Core the apples. Finely chop the onions and apples. Heat butter in a pan, sauté the onions, add the apples and continue cooking, season with salt and pepper, flavor with thyme, and taste for seasoning. Mix in the chestnuts, remove from heat, and let the mixture cool to lukewarm before filling the turkey.
