Ingredients

  • 750 g bell peppers (red, green, yellow)
  • 1 vegetable onion
  • 1 small sprig rosemary (or 2 tsp dried)
  • 50 g sun‑dried tomatoes in oil
  • Pepper (freshly ground)
  • 1 tbsp vinegar (preferably red wine or balsamic)
  • 100 g black olives (pitted)
  • 150 g goat cheese
  • Salt

Instructions

    Quarter the bell peppers, clean, seed and rinse under running water. Cut peppers into large pieces. Peel the onion and cut into large cubes. Rinse rosemary and strip the needles.

    Slice the sun‑dried tomatoes into strips and heat them with oil in a large pan. Add peppers and onions and sauté for 6–8 minutes while adding rosemary. Season with pepper and vinegar, then add olives. Cut goat cheese into large pieces and mix in. Warm everything briefly again and season with salt.
