Ingredients

  • 500 g wax beans
  • Salting
  • 200 g cucumber salad
  • 100 g red bell pepper
  • 100 g yellow bell pepper
  • 100 g shallots
  • 1 Garlic clove
  • 2 tbsp white wine vinegar
  • ground pepper from the mill
  • 8 tbsp olive oil
  • 20 raw shrimp (with shell)
  • 40 g chorizo sausage
  • 30 g white bread
  • 2 tbsp butter
  • 1 lemon (unprocessed)
  • 250 g tomatoes
  • 3 basil stems

Instructions

    Clean and rinse wax beans. Boil in salted water for 7-8 minutes, drain, briefly shock with cold water, then let drain. Peel and deseed cucumber. Clean and rinse bell peppers. Peel shallots and garlic. Dice cucumber, bell peppers, shallots, and garlic finely. Mix vinegar with salt, pepper, and 6 tbsp olive oil. Combine prepared ingredients with vinaigrette and let marinate for 30 minutes.

    Rinse shrimp, remove shells while leaving the tail fan attached. Do not cut too deep on the back side of shrimp. Lift the exposed gut with a knife tip at the end and gently pull it out. Dice chorizo finely. Cube white bread. Heat butter. Fry bread cubes until crisp. Transfer to paper towels and set aside.

    Heat remaining olive oil. Sauté shrimp for 4-5 minutes. Grate lemon zest and briefly cook with diced chorizo. Season with a little salt and pepper.

    Rinse tomatoes and slice into rounds. Lightly salt and pepper. Arrange tomato slices and shrimp on a plate. Place marinated wax beans with vinaigrette over the tomatoes. Shake basil leaves, dry, and pluck them. Sprinkle basil leaf pieces over the plate.
