Ingredients

  • 160 g salmon fillet (skinless)
  • 2 lemons (juiced)
  • Salt
  • Pepper (freshly ground)
  • 1 small cucumber (peeled, seeded, diced)
  • 3 tsp olive oil
  • 50 g new potatoes (cooked and diced)
  • 1 tsp dill seeds
  • 2 tbsp yogurt
  • Cayenne pepper

Instructions

    Cut salmon into small cubes and mix in a bowl with 2 tbsp lemon juice, salt, pepper and 1 tsp olive oil; marinate for about 5 minutes.

    Mix cucumber cubes with a pinch of salt, let sit for about 10 minutes, then strain and drain. Blend half the cucumber cubes with the remaining lemon juice and 1 tsp olive oil.

    Combine cucumber cubes with 1 tsp olive oil and the rest of the lemon juice.

    Mix potato cubes with salt and dill seeds.

    Place a dough cutter as a mold on a plate; fill each with salmon cubes, press lightly, remove the mold carefully, then spoon some blended cucumber over it and distribute potatoes and cucumbers evenly. Add a dollop of yogurt and sprinkle cayenne pepper on top.
