Ingredients

  • 1 cucumber
  • 2 green tomatoes
  • 1 heirloom tomato
  • 5 cherry tomatoes
  • 1 Shallot
  • 1 Garlic clove
  • 2 tbsp white balsamic vinegar
  • 2 tbsp lemon juice
  • Salt
  • 1 tsp sugar
  • Pepper
  • 0.5 tsp mustard (medium hot)
  • 5 tbsp olive oil
  • 2 tbsp chopped basil
  • basil for garnish

Instructions

    Peel the cucumber, cut it lengthwise in half, scrape out the seeds with a spoon and dice the flesh into bite-sized pieces. Wash all tomatoes and pat dry. Slice the heirloom tomato thinly, quarter the cherry tomatoes. Quarter the green tomatoes, remove seeds and cube them as well. Peel the shallot and garlic and finely chop both.

    Whisk vinegar with lemon juice, salt, sugar, pepper and mustard to make the dressing, taste it, then whisk in the oil. Mix cucumbers and tomatoes, toss with the dressing, stir in basil, and serve in small glasses if desired. Garnish with basil leaves.
