Ingredients

  • 1 handful basil
  • 1 handful coriander leaves
  • 2 Garlic cloves
  • 1 untreated lemon
  • 4 tbsp olive oil
  • Salt
  • Pepper
  • 8 small pita breads

Instructions

    Wash, dry shake, and roughly chop the basil and coriander leaves for the Chermoula. Peel the garlic. Squeeze juice from the lemon. Finely crush the garlic in a mortar, mix with herbs, lemon juice, and olive oil, then season with salt and pepper.

    Place the breads on the grill and heat both sides for 4-5 minutes until hot. Just before serving brush with Chermoula (optionally add a sprig of rosemary), remove from grill, and serve.
