Marinated Rockfish

Ingredients
- 300 g rockfish or redfish fillet (the fish must be absolutely fresh!)
- 2 limes
- 4 tomatoes
- 1 white onion
- 1 tbsp Olive Oil
- Salt
- Pepper (freshly ground)
- 1 tsp spicy chili sauce
- 50 ml tomato juice
- 0.5 organic orange (juice only)
- 1 bunch coriander leaves

Wash the fish fillet thoroughly and pat dry with kitchen paper. Place the fish in a glass or porcelain bowl and drizzle with freshly squeezed lime juice. Cover with foil and marinate in the refrigerator for about 15 minutes. Meanwhile, blanch the tomatoes, shock them, and peel. Quarter the tomatoes, remove seeds and stems, then dice into small cubes. Peel the onion and finely chop.

Remove the fish from the marinade, pat dry, and cut into small cubes. Place in a glass bowl. Add the tomato and onion cubes on top, season with salt, pepper, and chili sauce. Mix well, pour over the tomato and orange juice, and refrigerate for 2 to 3 hours.

Before serving rinse the coriander, shake dry, pluck the leaves, and spread half of them onto four plates. Distribute the marinated fish on top and drizzle with some marinade. Finally sprinkle with the remaining chopped coriander.
