Ingredients
- 1 kg Hokkaido pumpkin flesh
- 200 ml water
- 100 ml White wine
- 150 g sugar
- 6 star anise
- 6 cloves
- cinnamon stick (optional)

Preheat oven to 200°C.

Cut the pumpkin flesh into cubes and distribute onto 2-3 mason jars. Bring the water with sugar to a boil. Add the wine and pour the liquid over the pumpkin pieces.

Add star anise, cloves, and cinnamon, then seal the jars.

Place a kitchen towel on a baking sheet and set the jars on top. Pour just enough simmering water around them and sterilize in the oven for at least 40 minutes.

Turn off the oven and let the jars cool.
