Ingredients
- 250 g carrots
- 1 untreated lemon
- 3 oranges
- 1 grapefruit
- 250 g gelesugar (3:1)
- 5 tbsp dry wormwood

Wash the lemon hot, dry it and peel the zest thinly with a sharp knife. Cut the zest into fine strips. Squeeze juice from the lemon, oranges and grapefruit. Peel carrots and grate them coarsely.

Mix carrots with juice and gelesugar, bring to a boil and simmer for about 4 minutes while bubbling. Perform a gelling test, if necessary continue cooking for a few more minutes. Stir in wormwood, immediately pour the marmalade into hot pre-rinsed twist-off jars and seal.
