Kohlrabi Gratin with Herb Quark

Ingredients
- 1 kohlrabi
- 400 g Potatoes
- 2 carrots
- iodized salt
- white pepper
- nutmeg
- 1 egg
- 200 g Low-fat quark
- 4 tbsp low-fat milk
- fresh herbs (e.g., parsley, chervil, basil)
- 2 tbsp pumpkin seeds

Wash, peel, and thinly slice the kohlrabi, potatoes, and carrots. Layer the prepared vegetables in a baking dish and season with salt and pepper.

Separate the egg. Whisk the quark with the yolk, salt, pepper, and milk. Finely chop the herbs and fold them into the quark mixture. Beat the egg white until stiff and gently fold it into the quark blend. Spread the quark over the vegetables.

Bake the gratin in a preheated oven at 150°C for about 50 minutes (cover with foil if needed). Sprinkle the pumpkin seeds roughly 5 minutes before the end of baking, then finish cooking.
