Ingredients
- 7 tbsp dry white wine
- 100 ml apple cider vinegar
- Salt
- Pepper (freshly ground)
- 2 tsp sugar
- 6 tbsp sunflower oil
- 100 g pearl onions (canned)
- 1 large carrot
- 400 g small round Harzer cheese (or other sour milk cheese)
- smooth parsley
- 1 tbsp Pumpkin seeds

Drain the pearl onions. Peel and finely grate the carrot. Bring wine, vinegar, salt, pepper, sugar, and oil to a boil; add the pearl onions and grated carrot, bring to a boil again, then remove from heat and let steep for about 5 minutes. Cut the cheese as desired and pour the onion-carrot broth over it, cover and let sit for several hours, preferably overnight.

Wash the parsley, shake off excess water, and pluck the leaves from the stems. Fold the parsley and pumpkin seeds into the marinate.
