Marinated Young Artichokes

Ingredients
- 12 artichokes (small and fresh)
- juice of one lemon
- Salt
- Pepper (freshly ground)
- 5 tbsp lemon juice (freshly squeezed)
- 10 tbsp extra virgin olive oil
- 3 tbsp chopped parsley
- 1 Carrot
- 1 white onion
- 1 Garlic clove

Remove the outer hard leaves generously from the artichokes, then cut off the tips. Trim the stems. Cut the artichokes lengthwise in half or quarters and place them in a large pot of plenty salted water. Bring to a boil and cook the artichokes 15-20 minutes, then lift out and drain well.

Peel the onion and slice into thin strips. Peel the carrot and cut into thin slices. Peel the garlic and finely chop. Whisk together oil, lemon juice, onion, garlic, carrot, parsley, salt, and pepper to make a dressing. Toss the hot artichokes with the dressing and let sit for 15 minutes. Stir again and serve with fresh white bread.
