Ingredients

  • 2 slices fresh tuna (about 3 cm thick, 200-250 g each)
  • 2 tbsp lemon juice
  • Salt
  • Pepper (freshly ground)
  • 4 tbsp olive oil
  • 10 bay leaves
  • 1 tbsp butter
  • fresh bay leaf (and lemon wedges)

Instructions

  1. 1.

Rinse tuna slices briefly and pat dry with kitchen paper. Mix 1 tbsp lemon juice with salt, pepper, and 2 tbsp olive oil. Place tuna with halved bay leaves and the mixture in a freezer bag, seal, and marinate in the refrigerator for about 4 hours, turning occasionally.

  2. 2.

Heat 2 tbsp olive oil with butter in a pan.

  3. 3.

Remove tuna from the marinade, discard bay leaves, and sear each side for about 4 minutes.

  4. 4.

Season lightly with salt and pepper, transfer to a preheated plate. Resolve the pan drippings with the marinade (without bay leaves), bring to boil, pour over the fish, and garnish with fresh bay leaves and lemon wedges.
