Ingredients
- 4 salted herrings (de-shelled)
- 2 mild small onions
- 8 radishes
- 1 tsp peppercorns
- 1 tsp pink pepper berries
- 300 ml white wine vinegar (or fruit vinegar)
- 50 g sugar
- 1 tbsp salt

Soak the salted herrings for at least 12 hours, then rinse thoroughly and remove any remaining scales. Cut off the heads, fillet the fish while removing the central spine. Rinse the fillets again, drain, and cut into bite-sized pieces. Peel the onions and slice into rings. Wash, trim, and slice the radishes. Combine the onion rings, peppercorns, pink pepper with the fish in four small mason jars (about 250 ml each).

Bring the vinegar with 250 ml water, sugar, and salt to a boil.

Let the broth cool slightly, pour it over the fish, and allow it to chill. Cover and refrigerate for about 2 days.
