Mango with Oyster Skewers

- 1 Mango
- 2 stalks coriander leaves
- 2 tbsp rice vinegar
- 4 tbsp soy oil
- Salt
- 12 oysters
- Tandoori masala spice mix
- 4 tbsp flour
- 1 egg
- 6 tbsp bread crumbs
- vegetable oil (for frying)

Peel the mango all around and cut the flesh from the pit. Cut into 12 cubes about 4x4 cm each. Dice the remaining flesh small. Rinse the coriander leaves, shake dry, pluck the leaves and finely chop. Add to the small mango cubes, mix in rice vinegar and 2 tbsp oil, season with a little salt, set aside and let rest.

Wash the oysters, open them and release the oyster meat from the shells. Pat dry and dust with some tandoori masala. Then coat in flour, tap off excess, dip through beaten egg, and coat with panko breadcrumbs.

Heat frying fat to about 170°C and briefly fry the oysters. Sauté the mango cubes in remaining oil on all sides for a short time. Place the marinated mango pieces on top. Thread one oyster onto each wooden skewer and attach to the mango cubes. Serve immediately.
