Ingredients

  • 200 ml white balsamic vinegar
  • 1 tsp sugar
  • 0.5 tsp citric acid
  • 50 g salt
  • 10 g fresh yeast
  • 1 kg small green tomatoes
  • 2 Garlic cloves
  • 6 red chili peppers
  • 40 g dried chickpeas
  • 2 stalks Parsley

Instructions

    Stir the balsamic with 800 ml cold water, sugar, citric acid and salt until everything is dissolved. Distribute into jars. Divide the yeast into four parts and tie each in a coarse linen bag. Place one in each jar.

    Wash, clean and halve or quarter the tomatoes. Peel the garlic cloves and wash the chili peppers. Wash the parsley, shake dry and pluck the leaves. Now distribute all ingredients alternately onto the four jars. Seal the jars airtight and store for about 3 weeks in a warm, dark place.
