Eggplant Slices with Tomato and Cheese

Ingredients

  • 2 small eggplants
  • Salt
  • olive oil
  • 3 tomatoes
  • 150 g mozzarella
  • 150 g Italian salami
  • pepper (ground)
  • basil (for garnish)

Instructions

    Preheat the oven to 220°C.

    Wash the eggplants, trim the stem ends and slice them. Sprinkle with salt and let sit for about 20 minutes. Pat dry and fry in a hot pan with 2 tbsp oil until golden brown on both sides. Remove, drain on kitchen paper, and place on a baking sheet lined with parchment paper.

    Wash the tomatoes, remove stem ends and cut into slices. Slice the drained mozzarella into rounds. Layer each eggplant slice with a tomato slice, a salami slice, and mozzarella slices. Season lightly with pepper and bake in the preheated oven until golden brown. Garnish with basil before serving.
