Fried Salad Balls

Ingredients

  • 500 g radicchio
  • 1 loaf of bread (from yesterday)
  • 0.125 l milk
  • 3 eggs
  • 100 g grated Parmesan
  • 100 g breadcrumbs
  • 1 bunch parsley
  • 1 pickled cucumber
  • 1 tbsp capers
  • 4 tbsp flour
  • Salt
  • Pepper
  • oil for frying

Instructions

    Wash, trim and boil radicchio in salted water for 10 minutes. Drain, finely chop and puree.

    Soak bread in hot milk, squeeze out excess liquid and mix with eggs, parmesan and breadcrumbs.

    Fold in radicchio purée. Finely chop capers, pickled cucumber and parsley, stir in, season with salt and pepper.

    Shape walnut-sized balls, coat in flour and fry in hot oil until golden. Drain on paper towels.
