Ingredients
- 1 tsp Herbs de Provence (dried)
- 1 fresh red chili pepper
- zest of 1 lemon (juice)
- 1 tbsp peppercorns
- 5 garlic cloves
- 2 shallots
- 100 ml water
- 6 small French goat cheese rounds (or 1 Buchette d’Anjou, sliced thickly)
- 3 bay leaves
- 0.5 l olive oil
- Salt
Instructions

Peel the garlic and shallots. Wash, deseed, and finely chop the chili pepper.

Place the garlic cloves, shallots, and goat cheese in a sealable jar, layering with herbs, chili, peppercorns, and bay leaves between them.

Mix lemon juice with olive oil, pour over the contents, and let steep for about 10 days in a cool place.
