Ingredients

  • 1 tsp Herbs de Provence (dried)
  • 1 fresh red chili pepper
  • zest of 1 lemon (juice)
  • 1 tbsp peppercorns
  • 5 garlic cloves
  • 2 shallots
  • 100 ml water
  • 6 small French goat cheese rounds (or 1 Buchette d’Anjou, sliced thickly)
  • 3 bay leaves
  • 0.5 l olive oil
  • Salt

Instructions

    Peel the garlic and shallots. Wash, deseed, and finely chop the chili pepper.

    Place the garlic cloves, shallots, and goat cheese in a sealable jar, layering with herbs, chili, peppercorns, and bay leaves between them.

    Mix lemon juice with olive oil, pour over the contents, and let steep for about 10 days in a cool place.
