Ingredients
- 1 medium cauliflower
- Salt
- 1 thumb-sized piece ginger
- 2-3 chili peppers
- 50 ml white wine vinegar
- 150 ml instant vegetable broth
- 2 tbsp sugar
- 1 tbsp mustard seeds
- ½ tsp fennel seeds and pink peppercorns each
- 1 bunch chives

- 1 bowl watercress
- 500 g yogurt (10%)
- salt, freshly ground pepper

Clean cauliflower, cut into florets and cook in salted water for 5 minutes. Drain, rinse with cold water, and let drain.

Peel ginger and finely chop. Slice chili peppers lengthwise, remove seeds, and finely chop. Rinse lime and cut into pieces. Boil vinegar with broth, sugar, 3-4 tsp salt, and spices. Mix cauliflower with chili, ginger, and lime in a bowl. Pour the broth over it. Let steep for 4-6 hours.

Rinse herbs, shake dry, and finely chop. Trim watercress. Whisk yogurt with salt and pepper. Fold in herbs. Serve as dip with cauliflower.
