Ingredients

  • 100 ml tomato juice
  • 4 ripe tomatoes
  • 50 ml milk (1.5 % fat)
  • 100 ml whipping cream
  • 2 drops bitter almond aroma
  • 1 tbsp almond oil
  • Salt
  • Pepper
  • 4 tbsp grated Parmesan
  • paprika powder

Instructions

    Distribute the tomato juice into 4 ice cube trays and freeze.

    Remove the stem from the ripe tomatoes, de-seed, peel, and dice into small cubes. Lightly salt and pepper them.

    Spread the parmesan into long thin triangles on parchment paper and bake in a preheated oven at 160°C until melted. Dust with paprika powder, carefully lift off the parchment, and let cool.

    Combine the cream with the milk and almond aroma in a blender and whip to foam.

    Distribute the tomato tartare into 4 glasses, pour the foam over it, drizzle with oil, and garnish each with an ice cube and a parmesan cracker.serve.
