Marble Cake with Pink Icing

Ingredients

  • 250 g room‑temperature butter
  • 1 packet vanilla sugar
  • 200 g sugar
  • 5 eggs
  • 1 pinch salt
  • 500 g flour
  • 1 packet baking powder
  • 150 ml milk
  • 3 tbsp cocoa powder
  • butter (for greasing the pan)
  • 250 g powdered sugar
  • 2 tbsp lemon juice
  • 1 tbsp rose water
  • red food coloring
  • candied organic rose petals (for garnish)

    Beat the butter with vanilla sugar and sugar until fluffy. Add eggs and salt, continue beating until the mixture is pale yellow and creamy. Mix flour and baking powder together and gradually fold into the batter. Add about 120 ml milk and stir to a smooth dough; add more milk if too stiff. Divide half of the batter in another bowl, mix with about 30 ml milk and cocoa until well combined. Grease a bundt or loaf pan with butter and dust with breadcrumbs. Preheat the oven to 180°C (350°F) with top and bottom heat. Pour the light batter into the pan, then add the dark batter on top. Using a fork, gently swirl in circular motions to create a marble pattern. Bake for about 60 minutes until golden brown; test with a toothpick. Remove from oven, let rest briefly, then invert onto a wire rack to cool completely. Whisk powdered sugar with lemon juice, rose water and food coloring into a thick pink glaze. Drizzle over the cooled cake, sprinkle candied rose petals on top, and allow to set before cutting into slices.
