Ingredients

  • 250 g flour
  • Salt
  • 10 g yeast
  • 1 tsp sugar
  • flour (for rolling)
  • 250 g fresh porcini mushrooms (or chanterelles)
  • 1 small onion
  • 30 g Butter
  • 1 egg
  • pepper (ground)
  • 2 tbsp olive oil (for frying)
  • 30 g butter (for brushing)

Instructions

    Knead the flour with yeast, salt, sugar and 150 ml lukewarm water into a smooth dough. Let rise for 20 minutes.

    Meanwhile, clean the mushrooms and slice them. Peel and dice the onion. Heat 30 g butter in a pan, sauté the onions until translucent. Add the mushrooms and cook for 1 minute. Beat the egg, pour over the mushroom mixture and stir constantly until it sets. Season with salt and pepper.

    Melt the remaining butter and keep warm. Knead the dough again and shape into eight equal balls. Cover with a cloth. On a floured surface roll each ball into a circle about 24 cm in diameter. Place part of the mushroom filling on one half, fold over the other half, flatten gently and press the edges together.

    Brush a non-stick pan with olive oil, heat it and gradually fry all flatbreads from both sides until golden yellow. Immediately brush with butter and serve. At the table roll the flatbreads together and eat them by hand.
