Ingredients

  • 12 large mushrooms (for stuffing)
  • oil (for greasing)
  • 1 lemon
  • 3 spring onions
  • 3 Garlic cloves
  • 2 tbsp whole‑grain breadcrumbs
  • 2 tbsp olive oil
  • 125 g double cream cheese
  • 1 egg yolk
  • 25 g mixed herbs (frozen)
  • Herb salt
  • freshly ground pepper

Instructions

    Gently wipe the mushrooms with kitchen paper. Trim the stems, remove the remaining stems and finely chop them. Place the mushrooms on a baking sheet lined with parchment paper and drizzle with a few spritzes of lemon juice.

    Clean the spring onions. Peel the garlic and finely mince both. Sauté the chopped mushrooms, spring onions, garlic and breadcrumbs in olive oil for about three minutes. Let the mixture cool.

    Stir together the cream cheese, egg yolk, herbs and mushroom‑onion mix. Season with herb salt, pepper and lemon juice. Fill the mushrooms with the cream and bake in a preheated oven at 200 °C fan or 170 °C gas level 3 for about 15 minutes. Serve with whole‑grain rice and salad.
