Ingredients
- 1 Swiss chard (about 600 g)
- 150 g starchy potatoes
- 150 g celeriac
- 1 onion
- 1 Garlic clove
- 2 tbsp Vegetable oil
- Salt
- ground pepper
- 150 ml coconut milk
- 1 tsp Lime juice

Wash, trim and drain the Swiss chard; roughly chop stems and leaves. Peel and dice the potatoes, celeriac, onion, and garlic. Sauté the celeriac, onion, and garlic in hot oil for 1–2 minutes. Add the chard stems and potatoes, season with salt and pepper, then pour in broth and coconut milk. Simmer gently for about 20 minutes. During the last 5 minutes add the chard leaves. Blend the soup until smooth; strain if desired. Adjust consistency by simmering longer or adding more broth.
