Almond Soup

Ingredients

  • 3 slices of white bread (ca. 100 g)
  • 150 g unpeeled almond kernels
  • 3 Garlic cloves
  • 4 tbsp olive oil
  • 1 tbsp White Wine Vinegar
  • Salt
  • Pepper
  • 2 tbsp toasted almond flakes

Instructions

    Drain the white bread and soak it in cold water.

    Rinse the almonds with boiling water, press out the kernels from the shells and pat them dry.

  3. 3.

    Peel the garlic. Squeeze the soaked bread well and blend it with the garlic and almonds.

    Mix the paste in a large bowl with olive oil and 800 ml water.

  5. 5.

    Season heavily with vinegar, salt, and pepper, cover and refrigerate for about 1 hour. Serve in bowls topped with almonds.

    Serve toasted bread on the side as desired.
