Mangold Pizza with Sardine Fillets

Ingredients
- 20 g yeast
- 400 g flour
- 4 tbsp olive oil
- 1 tsp sugar
- 1 tsp salt
- 16 sardines (ready to cook and headless)
- 400 g diced canned tomatoes
- 2 mangold stems
- 1 shallot (diced)
- 1 garlic clove (diced)
- olive oil
- 250 g grated cheese
- Salt
- freshly ground pepper
- 4 rosemary sprigs

Knead a yeast dough from flour, yeast, olive oil, sugar, salt and about 250 ml lukewarm water. Cover and let rise in a warm, draft‑free spot for about 1 hour. Punch down the dough and let it rise again for another 30–40 minutes.

Line a baking sheet with parchment paper.

Dust a work surface heavily with flour, divide the dough into four balls, roll each out with a rolling pin. Place on the tray and press evenly with your hands, leaving a slightly thicker edge. Drain the canned tomatoes well (reserve the juice for another use). Brush the dough with olive oil. Spread the diced tomatoes evenly over the base and season with salt and plenty of pepper.

Wash the mangold, remove tough stems and roughly chop. Sauté shallot and garlic in 2 tbsp olive oil, add the mangold and cook until wilted. Season with salt and pepper and distribute over the pizzas. Sprinkle grated cheese on top and scatter halved sardines across each pizza.

Bake in a preheated oven at 220 °C (425 °F) under both fan and conventional heat for about 20–25 minutes, or until golden brown.

Serve garnished with rosemary sprigs.
