Pizza with Anchovies and Basil

- 15 g fresh yeast
- 250 g spelt whole‑grain flour
- 50 g semolina
- 0.5 tsp Salt
- 600 g tomatoes
- 250 g mozzarella
- 200 g anchovies (in oil)
- Salt
- Pepper
- Basil

Crush the yeast and dissolve it in 50 ml lukewarm water for the dough. Mix the flour with semolina and salt, place in a bowl, make a well and pour in the yeast. Dust with flour and let rise for 15 minutes.

Add 100–120 ml lukewarm water to knead into a smooth dough, shape into a ball, cover with a cloth and let rise for 1 hour.

Meanwhile, score the tomatoes crosswise, blanch them in boiling water, peel, remove seeds and dice the flesh. Slice the mozzarella thinly.

Preheat the oven to 180 °C (top and bottom heat).

Divide the dough into four pieces and roll each on a lightly floured surface into pizzas about 20 cm diameter. Place on baking trays lined with parchment paper, top with diced tomatoes, anchovies and mozzarella slices.

Bake in the preheated oven for 10–15 minutes.

Top with basil leaves, salt and pepper.
