Mallorcan Vegetable Pizza

Ingredients
- 0.5 cube fresh yeast (21 g)
- 350 g flour
- 0.5 tsp Salt
- olive oil
- flour (for the work surface)
- 4 tbsp raisins
- 350 g fresh spinach leaves
- 2 Spring Onions
- 3 tbsp pine nuts
Instructions

Dissolve the yeast in 150 ml lukewarm water for the dough.

Mix the flour with the salt in a bowl, create a well in the center, pour in the yeast mixture and 2 tbsp oil, then knead into a smooth dough by hand or with an electric hand mixer. Knead vigorously on a floured surface for about 10 minutes, cover and let rise in a warm, quiet place for 1 hour.

Preheat the oven to 220°C (428°F) with upper and lower heat.

Soak the raisins in warm water.

Wash, trim, and clean the spinach leaves, then drop them into boiling salted water. Drain, shock in cold water, and let drain well.

Wash and trim the spring onions, slicing them into thin rings.

Knead the dough again, roll it out to fit a baking tray. Line the greased tray with parchment or oil, top with spinach, drained raisins, onion rings, and pine nuts. Season with salt, pepper, a pinch of nutmeg, and drizzle olive oil over the top. Bake in the preheated oven for about 20 minutes until golden yellow. Remove, cut into pieces, and serve.
