Mangold-Champignon Omelette

Spoonsparrow Mangold-Champignonomelett is always wonderfully good.
Ingredients
- 500 g Swiss chard
- 2 onions
- 3 butter
- 250 g Mushrooms
- 200 g shiitake mushrooms
- 6 Eggs
- Salt
- Pepper
Instructions

Wash and dry Swiss chard leaves, trim ends slightly, cut leaves and stems into strips.

Peel and finely chop onion, sauté in butter. Clean mushrooms, slice thickly, add to pan and cook until liquid evaporates.

Add Swiss chard strips and stems, simmer for about 8 minutes. Beat eggs with salt and pepper, pour over the mixture. Cover and cook until the egg is set.
