Mango Sticky Rice
Mango Sticky Rice by Spoonsparrow – A classic, exotic dessert made from sweet sticky rice, creamy coconut milk, and fresh mango.
Ingredients
- 200 g uncooked glutinous rice
- 400 ml unsweetened coconut milk
- 5 tbsp sugar (75 g)
- 3 ripe mangos
Instructions

Soak the glutinous rice in cold water for about 12 hours. Drain well in a sieve, transfer to a pot and add enough water so that the water level is about 1 cm above the rice.

Bring the water to a boil, then cover and simmer over low heat for about 20 minutes until all the water has been absorbed by the rice. Let the rice cool with the lid open. In another pot, combine the coconut milk, sugar, and 3 tbsp water; bring to a quick boil.

Remove from heat, add the cooked sticky rice, and stir well. Peel the mangos with a sharp knife, separate the flesh from the pit, and cut into long strips. Arrange the sticky rice in bowls and top with mango slices.
