Mango Sorbet with Grilled Mango

Ingredients
- 4 ripe mangos
- lime
- 75 g sugar
- 2 tbsp Orange juice
- 1 Egg white
- 5 g Butter (1 tsp)

Peel the mangos. Cut the flesh into segments away from the pit. Juice half a lime.

For the sorbet, combine the flesh of 2 mangos, sugar, lime and orange juice in a tall container and blend with an immersion blender until smooth. Separate the egg (use yolk elsewhere). Whisk the egg white until stiff peaks form and fold into the puree.

Transfer the mixture to a bowl and place it in the freezer. When the mixture starts to freeze, stir with a fork to break up ice crystals (or use an ice cream maker). Repeat 3–4 times. Freeze for at least 3 hours total.

In a saucepan melt butter. Brush the remaining mango segments with butter and grill them on a hot grill for about 2–3 minutes on each side.

Before serving let the sorbet soften slightly and plate it with grilled mango pieces.
