Ingredients

  • 125 ml water
  • 100 g sugar
  • juice of one lemon
  • 1800 g ripe mango (3 ripe mangos)
  • a few lemon balm leaves

Instructions

    Boil water and sugar for 5 minutes to make syrup. Add lemon juice and let the syrup cool.

    Peel the mangoes and cut the flesh away from the fibrous core. Combine with the syrup in a tall mixing bowl and puree.

    Prepare the mango purée in an ice cream maker according to instructions until ready to serve.

    Peel remaining mango, separate from core, and slice into rounds.

    Arrange the mango slices alongside the sorbet on a plate. Garnish with lemon balm leaves.
