Sweet Potato Casserole with Pecans

Ingredients
- 1 kg sweet potatoes
- Salt
- 40 g pecan nuts (2 tbsp)
- 20 g walnut kernels (1 tbsp)
- 1 orange
- 30 g maple syrup (2 Tbsp)
- Pepper
- 1 tsp Rapeseed oil
- 5 g margarine (1 tsp)

Wash the potatoes and parboil in salted water for about 20 minutes. Peel, let cool slightly, and slice.

Meanwhile chop the nuts roughly. Squeeze the orange, mix juice with maple syrup, and season with salt and pepper.

Grease a baking dish with oil. Layer potato slices and drizzle with the juice mixture. Dot with margarine pieces and sprinkle nuts on top. Bake in preheated oven at 200 °C (180 °C fan; gas: level 3) for about 20 minutes until golden.

Serve hot, garnished with fresh herbs if desired.
